Match richness to richness
Fatty beef wants acidity or heat: a sharp house sauce, mustard, pickles. Lean chicken wants something creamy or sweet to carry it. Vegetables and halloumi want smoke and salt.
Sauce both sides of the bun
A thin layer on the base and a thin layer on the lid holds the build together and keeps the bread from soaking through in one spot. Never pour sauce directly onto a hot patty.
The four that cover everything
If you keep only four bottles, keep these:
- A smoky house sauce for beef
- Mustard for hot dogs and anything cured
- Ketchup for children and for mixing
- Something hot, served on the side so nobody is ambushed
Serve them cold
Sauces left in the sun turn thin and dull. Keep the bottles in the fridge and bring out only what is being used.
